Prawn & Smoked Salmon Salad

A quick and simple salad, perfect as a starter or a lunch time snack. Serves 2!

Ingredients:

As many king prawns as you'd like, cooked & peeled
Pack of good quality smoked salmon
2 baby gem lettuces
10-12 vine cherry tomatoes
Extra virgin olive oil
Couple of bulbs of garlic, roughly chopped
1 red chilli, diced
1 lemon
Coarse black pepper
Pinch of dry dill


1. Mix a few teaspoons of olive oil in a bowl with the chilli, garlic and juice of half a lemon and coat the prawns with the dressing
2. Fry the prawns for a few minutes to warm through
3. Slice the salmon into bitesize strips
4. Wash the lettuce and arrange 2-3 leaves on a plate
5. Add the vine cherry tomatoes to the plate
6. Mix the now-warm prawns with the smoked salmon and scatter over the lettuce leaves.
7. Sprinkle some dry dill and black pepper over the top

Ideas:

 - fry or grill the vine tomatoes before serving
 - squeeze some more lemon juice over, at the end

  1. Can I swap the smoked salmon for smoked bacon & the prawns for boiled eggs? I'm not joking... I don't like seafood. Would it still taste good. I'm not great at cooking... after my accident it's hard to get around the kitchen. It's getting better though... next month the council are going to lower all the sideboards so as I can chop onions from the chair. Anyway... let me know about the eggs & bacon. Many thanks, Shane.

  2. Hello Shane. Thanks for the comment. If you think you might like to try the lettuce, etc. with breakfast ingredients.. then you MIGHT like to try this recipe! It's a recipe a friend gave me..

    Ingredients:

    Bacon
    Eggs
    Black pudding
    Curly leaf lettuce
    Cress
    Borderline stale bread

    1. Wash some curly leaf lettuce leaves and some fresh cress and place into a bowl
    2. Fry some roughly chopped bacon and, if you like it, some chopped black pudding in a pan
    3. After a few minutes, add some bite size chunks of bread
    4. Remove from the pan once everything is crispy and serve over the lettuce & cress!

    It's lovely topped with a poached egg and some chopped fresh chives, but seeing as how you mentioned boiled eggs, it would also be really nice with some sliced boiled eggs scattered over! Try it and let me know what you think.

    I read that you have a roasted red pepper & tomato sauce so you'll have to let me know you make that :)
